Ingredientes

  • 1 cup frozen corn
  • 1 medium red bell pepper, diced
  • 1 small onion, diced
  • 2 jalapeño chiles, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, finely chopped
  • 1/2 cup Gold Medal™ all-purpose flour
  • 2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 can (15 oz) reduced-sodium black beans, drained
  • 2 plum (Roma) tomatoes, diced
  • 2 limes, juiced (2 to 4 tablespoons)
  • 1/2 cup water
  • 2/3 cup shredded reduced-fat sharp Cheddar cheese
  • Corn tortillas (6 inch), if desired

Instrucciones

    Set oven control to broil.

    In ovenproof skillet, mix corn, bell pepper, onion and chiles. Cook over high heat 5 minutes or until bell pepper begins to soften and corn begins to blacken. Add cilantro and garlic; cook 1 minute. Remove vegetables from skillet; set aside.

    In medium bowl, stir together flour, chili powder, cumin and paprika. Lightly coat chicken with flour mixture.

    Heat oil in same skillet over medium heat. Add chicken; cook 3 minutes on each side or until nicely browned.

    Return cooked vegetables to skillet. Stir in beans, tomatoes, lime juice and water. Cook 10 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165° F).

    Sprinkle cheese over top. Broil 3 minutes or until cheese begins to bubble. If desired, sprinkle with additional cilantro and serve with tortillas.
