Aguachile is one of the most delicious seafood dishes I’ve ever tasted. Because it doesn’t require stove cooking, it’s as easy as making a salad. Enjoy with tortilla chips or crackers as an appetizer or tasty lunch. You will love the tang and spice in every bite.

Ingredients

  • 24 large raw shrimp, tail off
  • 1 1/2 cup lime juice
  • 1 Roma tomato
  • 1/3 cup purple onion, sliced
  • 2 Serrano peppers
  • 1 cucumber, chopped
  • 1 avocado, chopped
  • 1/3 cup fresh cilantro, chopped
  • 1 teaspoon fresh cracked pepper
  • 4 lime wedges for garnish
  • salt to taste

Directions

    In a food processor combine lime juice and 1 Serrano pepper with stem removed. Blend until ingredients have combined.

    In a large bowl combine shrimp and lime juice mixture. Cover with plastic wrap and refrigerate for 1 hour. Shrimp should be completely cooked by the lime juice.

    Add tomato, onion, remaining Serrano chile chopped in slices, cucumber, avocado, and cilantro. Toss to combine.

    Sprinkle with cilantro, salt and pepper and serve.
