The festivities on the eve of Three Kings Day always remind me of my childhood. I was lucky enough to spend my early years in Spain, which gave me the opportunity to become familiar with many of the traditions of this beautiful country and its cuisine. I remember on the night before Three Kings day we would head to the streets to watch the parade where they would give away candy and all the kids would enjoy watching the Three Kings head to our homes to give us gifts. Part of the fun was in leaving them food as a sign of appreciation and among the many offerings you could always find the polvorones de almendras that my mom would bake the night before. The scent of almonds toasting is one my fondest memories. Here I share my recipe for almond polvorones with you. Enjoy!

Ingredients

  • 1 1/3 cups Gold Medal™ white whole wheat flour
  • 1 1/3 cup lard
  • 1/2 cup powdered sugar
  • Pinch of salt
  • 1 tablespoon of orange zest (optional)
  • 1/2 teaspoon of cinnamon
  • 1/2 cup toasted almonds, ground
  • 1/8 cup sifted flour or powdered sugar, to sprinkle on the polvorones

Directions

    Preheat the oven to 350°F.

    Place the wheat flour in a can with parchment paper and bake for 20 minutes. Remove from oven and allow to cool.

    Mix the lard, sugar, salt, orange zest, and cinnamon in a separate container until creamy. Then add the almonds and wheat flour to the creamy mixture, stir well until uniform.

    With the help of a rolling pin, extend the dough over a clean surface. Once stretched out, use a cookie cutter of your choice to cut out the cookies.

    Place the cookies on a tray and bake for 25 minutes at 375° F. Let cool and sprinkle with sifted flour or powdered sugar.
