Apple Quesadillas

We love quesadillas, not only because they’re delicious, but also because they’re so versatile and allow us to combine our favorite ingredients. Quesadillas are one of those dishes that help us out when we’re in a pinch for time in the kitchen, or when our pantry is empty. These apple quesadillas are my daughter’s favorite. She eats them like dessert; the brown sugar goes so well with gooey, melted cheese. I encourage you to prepare these quesadillas for dinner, snack time or even as an appetizer at children’s parties. They’re sure to be a hit!

Ingredients

  • 1 large apple
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • 6 whole wheat tortillas
  • 1 1/2 cups cheddar cheese

Directions

    Slice the apples to the desired thickness.

    Melt the butter in a frying pan and add the apple slices.
  • 3
    Add the sugar and let brown for a few minutes, until the apples have softened.

    Remove from heat.

    In another frying pan or on the grill, arrange the tortillas and cover with cheese.

    Arrange the sliced apples over the cheese and fold the tortillas to brown them on both sides.

    Serve immediately.

    You can use any variety of apples. If you prefer a sweeter recipe, pick a red variety, if you prefer a tangier version, go for green apples.
