In my house we're not necessarily gluten free, but we do like to give our menu a little variety and these rice noodles are always welcome. The recipe is flexible and can be served with red meat or chicken. You can also change up the vegetables, but I love asparagus year round and I always have them ready in my freezer. Give them a try; I think you'll like them.

Ingredients

  • 8 oz flattened rice noodle fettuccini style
  • 1 lb ground pork
  • 6 scallions cut into thin slices diagonally
  • 1 box of 9 oz asparagus cuts
  • 1 jalapeño or habanero thinly sliced
  • 2 cloves of minced garlic
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • Handful of chopped cilantro
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • Vegetable oil, salt

Directions

    Cook the noodles in hot water according to their instructions.

    Cook the asparagus according to their instructions, minus 2 minutes (they’ll finish cooking in the pan).

    Heat one tablespoon of oil in a large pan and cook the pork for 4-5 minutes on each side. It should be lightly browned.

    Add the chopped garlic, chopped ginger, half of the scallions and jalapeño. Stir. Add the noodles, soy sauce and rice vinegar.

    Stir and taste. Add more soy or salt if it’s necessary.

    Add the sesame seed oil right before serving and stir.

    Serve with jalapeño on top with the rest of the scallions, cilantro and sesame seeds.

    Serve hot.
