Asparagus and Zucchini Frittata

Sunday brunch is a great time to catch up with friends and visit your loved ones. In my family, we try to keep the tradition of meeting for brunch at least once a month, but meeting at restaurants can limit the time spent together. The restaurant bill can also be pretty pricey when we brunch with a large group. So we started a new tradition. Brunch at home! Brunching at home is a wonderful way to visit each other’s home and spend limitless time with one another. The children can play while the adults talk and laugh without any worry. This month, it’s my turn to host brunch, and I will be making various frittata’s to go with sweet, creamy pastries and refreshing mimosas. My favorite frittata to prepare for brunch, is this asparagus and zucchini frittata. It’s fluffy, tasty and a slice will satisfy hearty appetites. Serve it with heavy cream for added flavor, or keep it healthy and add pico de gallo or ricotta cheese for a zesty bite.

Ingredients

  • 1 tablespoon canola oil
  • 6 eggs, beaten
  • 1/3 cup whole milk
  • 1/2 teaspoon salt
  • 1 medium zucchini squash, rinsed and sliced in rounds
  • 4 to 6 asparagus stalks, rinsed and trimmed
  • 1/3 cup shredded Cheddar cheese
  • Fresh cracked pepper

Directions

    Heat oil on a non-stick pan over low heat.

    In a large mixing bowl whisk eggs, milk and salt until combined.

    Pour egg mixture in pan and arrange zucchini rounds and asparagus stalks over egg. Cover and continue to cook until egg sets. Approximately 7 minutes.

    Sprinkle with shredded cheddar cheese, cover and cook for 3 minutes or until cheese melts.

    To serve, sprinkle with cracked pepper.
