Baked Asparagus with Balsamic Vinaigrette

One of my favorite seasonal vegetables is asparagus. These delicious veggies cook in a jiffy and only need a few ingredients to highlight their flavor. I prefer cooking them in the oven because they remain crunchy, and I can cook them while I set the table. This recipe includes one of my favorite vinaigrettes-balsamic-which has the perfect balance of sweetness and acidity. I hope you like it.

Ingredients

  • 1 lb fresh asparagus
  • 2 soup spoons olive oil
  • 1 soup spoon balsamic vinaigrette
  • Salt and pepper, to taste
  • 1/2 cup sliced onions
  • 1 garlic, finely chopped

Directions

    Preheat the oven to 350° F.

    Cut the stems off the asparagus and discard them. Wash and strain the asparagus, and dry with a paper towel.

    Stir together the olive oil, balsamic vinaigrette, salt and pepper.

    Place the asparagus, onion and garlic in a baking tray. Pour the oil and vinegar mixture over them and stir until all the asparagus are completely covered.

    Bake for 10 minutes and serve immediately.

    Cutting the stems off the asparagus is simple. Take each one in your hands and fold; the asparagus will break on its own.
