Baked Trout with Lemon, Cilantro and Cumin

My dad loves trout and often requests it when coming over for dinner. Served over a bed of steamed rice, this oven baked trout recipe is one of his favorite meals. Melted butter, olive oil, garlic salt and cumin provide a subtle touch of warmth while not overpowering the fresh fish flavor. A few lemon slices over the trout help to keep it moist as it bakes while they caramelize and make for a nice addition to the steamed rice.

Ingredients

  • 2 tablespoons melted butter, divided
  • 2 tablespoons olive oil
  • 2 teaspoons garlic salt
  • 2 teaspoons cumin
  • 2 teaspoons freshly ground pepper
  • 1 large half of (8- to 12-ounce) whole trout, head removed, boned.
  • 4 slices lemon
  • 1/2 cup washed and chopped cilantro

Directions

    Preheat oven to 350 °F. Spray a large baking dish with cooking spray.

    In a small bowl, whisk to combine melted butter, olive oil, garlic salt, cumin and pepper.

    Place trout on baking dish and brush with butter mixture. Place lemon slices over trout and bake until trout flakes easily; about 15 minutes.

    Remove from oven and sprinkle with cilantro; serve warm.
