One of the mottos I live by is to make the most of the food I buy and not waste anything. I buy bananas every week, but sometimes they ripen too quickly and no one will eat them. When this happens, it’s the perfect opportunity to create something irresistible, like banana muffins. This basic recipe is very simple and because now I’m paying more attention to my family’s protein and fiber intake for breakfast, I’ve created banana muffins made with Fiber One® Protein Maple Brown Sugar cereal. Fiber One® Protein cereal contains 10 grams of protein when served with milk and provides 20% of the recommended daily fiber that we need to lead healthy lives. I invite you to try out this banana muffins recipe; you might be surprised at how delicious it is and it gives you something quick to make for your family. You could even take some a snack for work! Ingredients

  • 1 1/2 cups all purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon of salt
  • 1/3 cup of canola oil or clarified butter
  • 1 teaspoon of vanilla
  • 1 whole egg
  • 3 mashed bananas
  • 1 cup of brown or molasses sugar
  • 1/2 cup of Maple Fiber One Protein® Maple Brown Sugar cereal
  • Cooking spray

Directions

    Preheat your oven to 350°F.

    Pour the all-purpose flour, baking soda, and salt into a large bowl. Mix using a whisk.

    In another bowl, mix the bananas, egg, oil or butter, vanilla, and sugar with the help of an electric mixer.

    When this mixture is ready you can add the flour mixture little by little, continue mixing with the electric mixer.

    When all the ingredients are well combined, you can add the 1/2 cup of cereal and mix with the help of a wooden spoon.

    Prepare the baking mold by spraying with cooking spray to make sure the bread doesn’t stick.

    Add 2 tablespoons of the mixture to each of the molds and sprinkle with a bit of cereal to give your bread a crunchy texture.

    Bake for 30-40 minutes. You can serve the muffins fresh out of the oven with a glass of milk or a cup of coffee.
