As a little girl one of my favorite dishes was salpicón. This is a cold dish made of different pieces of meat and seasoned with pepper, salt, onion, lime, etc. I remember that we would eat it often at my grandmothers, especially in the summer. As the years went by, I forgot about this tasty dish. It wasn't until my mom decided to prepare it that it again became part of my life as a family favorite. Salpicón is a versatile dish that can be enjoyed as an appetizer or as a side.

Ingredients

  • 2 lbs flank steak
  • 1/2 onion to be used to boil meat
  • 3 celery sticks
  • 1/2 carrot
  • 1 red onion, julienned
  • 3/4 filleted lettuce
  • 4 potatoes peeled and cubed
  • 4 lemon juice
  • Salt and pepper to taste

Directions

    Heat enough water to cover the meat in a pot. When it begins to boil lower the heat and let the meat cook with the celery, carrot and salt. Once ready, remove from the pot and let cool.

    While the meat cooks, peel the potatoes, dice and boil in water. Once cooked, let cool.

    When the meat is cold, chop and shred it how you like.

    Julienne the onion and chop the lettuce.

    Mix all the ingredient and add lime juice, salt, pepper and a bit of olive oil.

    You can save the broth to use in other dishes. It's very good in soup.
