Brownie and Banana Ice Cream Sandwiches

Ice cream and warm weather days go hand in hand. Whether it's in cups or as a tasty ice cream sandwich, it's always refreshing and welcome, and provides the perfect opportunity to create desserts filled with flavor. What do you need to make a truly world-class ice cream sandwich? Simply a good cookie base and a delicious ice cream, nothing more! To avoid eating too many calories and enjoy a relatively guilt-free indulgence, I like making my ice cream with frozen bananas. Sometimes I'll simply add a tablespoon of vanilla. Other times, I'll add peanut butter or chocolate cream as in this recipe. As you can see, it's a fat-free ice cream without a drop of added sugar. The banana is sweet enough and does not need any additives; the texture is amazing, creamy and soft, but you have to eat it quickly because it melts very fast, though I probably don't need to mention that, as these sandwiches are so delicious they're sure to be devoured in the blink of an eye.

Ingredients

Brownie Cookies:

  • 1/2 cup margarine
  • 1/2 cup vegetable shortening
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/4 cups all-purpose flour
  • 1/4 cup cocoa
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 cup chocolate, chopped

Banana Ice Cream:

  • 4 ripe bananas
  • 2 tablespoons chocolate and hazelnut cream

Preparation:

  • 1 banana cut into thin slices
  • Mint leaves
  • Chocolate chips

    Brownie Cookies: Preheat the oven to 350° F.

    Beat the butter and vegetable shortening until creamy.

    Add the brown and white sugar and mix well, scraping the edges with a spatula.

    Incorporate the eggs one by one, and then add the vanilla.

    Combine the dry ingredients in a bowl (it’s not necessary to sift them) and pour them into the butter mixture. Add the chopped chocolate.

    Let the dough sit for one our in the fridge. Then use your hands to form small balls in the size you prefer and place them on a baking sheet. It should be a nonstick sheet, but you can also use a silicon sheet or line a sheet with parchment paper.

    Bake for 12 minutes or until the dough has browned a bit, so it’s chewy instead of crunchy. Cool on a rack.

    Ice Cream: Peel the bananas and cut then into slices. Freeze.

    Once firm, put them through the food processer. Add the chocolate and hazelnut creams, process until smooth and place in the freezer.

    Put it all together: Add a ball of banana ice cream to a cookie and top off with another cookie.

    Decorate the dish and the sandwiches with banana slices, mint leaves and chocolate chips.
