The sauce known as bruschetta is an excellent complement for pizzas, pastas, or even for eating as an appetizer before a meal. This recipe was created in Italy, during the 15th century in the Tuscany region. Originally this sauce did not contain tomatoes, and was only made from olive oil and garlic with day-old leftover bread. It was a common meal for poor families, but when the recipe was adopted by high social classes, bruschetta took on a whole new meaning. From then on, diced tomato was added and a great importance was placed on using high quality olive oil. In my opinion, this is a delicious sauce that can be used as the base for many dishes, which makes it a perfect recipe for sharing with you all. Let’s get cooking!

Ingredients

  • 2 cups fresh red tomatoes, diced in cubes (preferably Roma variety)
  • 4 garlic cloves, finely diced
  • 1 garlic clove for rubbing bread
  • 1/2 cup olive oil
  • 1/2 cup fresh basil, julienned
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon ground black pepper
  • Salt to taste
  • Baguette or ciabatta bread, sliced and toasted

Directions

    Place all the ingredients, except for bread, in a bowl and combine. Transfer the sauce to a serving dish, cover with plastic, and refrigerate until ready to serve.

    To prepare the bread, rub each slice with the remaining garlic clove and add a little olive oil. Toast in the oven for a few minutes or until golden-brown.

    To serve, place the bread on a tray with the dish of sauce dish in the middle. Place a little sauce on the bread and enjoy with a glass of white or red wine.

    The best and most used tomatoes for this sauce are the Roma variety, but you can also use dried tomatoes with a little goat cheese added if you wish.
