The cabbage niño envuelto is a classic dish of cabbage leaves stuffed with ground beef and baked in tomato sauce. This dish, also known as cabbage rolls, a dish that I enjoy from my childhood. My grandmother used to prepare her cabbage niño envuelto at least once a month. I loved it when the comforting scent of baked cabbage greeted me when I got home from school. I always thought my grandmother had spent hours in the kitchen to prepare them, but since I started preparing them for my family I discovered that it is much easier than I thought.

Ingredients

  • 6 to 8 green cabbage leaves
  • 1 lb. ground beef or pork
  • 2 tablespoons long grain rice
  • 2 tablespoons oats
  • 1 egg
  • 2 Roma tomatoes, finely chopped
  • 1/2 white onion, finely chopped
  • 1 garlic clove, finely chopped
  • 3/4 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 2 cans (8oz.) tomato puree

Directions

    Heat oven to 375 °F. Remove 6 to 8 leaves from a head of cabbage, make sure to keep the leaves whole.

    Soak the leaves in a pot of hot water for 3 to 5 minutes, until the leaves are soft and can be folded easily without breaking. Remove the leaves from the water and let them drain.

    Mix ground beef, rice, oats, egg, tomatoes, onion and garlic in a bowl; season with salt and dried oregano.

    Place 3 to 4 tablespoons of ground beef stuffing in the center of each leaf.

    Roll up the leaves like a burrito.

    Arrange the cabbage rolls with the fold down into the pan or baking dish.

    Pour the tomato puree on top of the cabbage rolls.

    Cover the pan with foil and bake at 375 °F for 45 to 60 minutes. Remove from oven.
