We're all familiar with Mexico's famous churros. Long strips of dough perfectly fried and covered with sugar and cinnamon. But did you know that Mexico has a different kind of churro called churro de cajeta. It doesn't look much like the other churros, but they're much tastier (in my opinion). Churros de cajeta are wide pieces and flat fried dough, but unlike the other churros these remain soft, like a donut. Once lightly fried, you open the churro with a knife to fill it with cajeta, the Mexican version of dulce de leche made with goat's milk. To finish the recipe, just sprinkle with sugar and ground cinnamon. Sounds delicious, right? Now you can prepare them at home and you won't believe how easy they are to make. I'm sure you'll agree that these churros de cajeta are finger-licking delicious!

  • 1 tablespoon ground cinnamon
  • 1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust

Open the pizza dough. Spread the dough on a lightly floured surface. Cut the dough in half the long way and then cut into 1 1/2 - 2 inch strips.
  •

Heat 2 to 3 cups of oil in a deep pan or pot at medium-high heat. Carefully ad 4-6 strips to the oil and let fry 2-3 minutes on both sides or until they’ve browned. Remove the churros from the oil and transfer to a dish lined with paper towels to strain the excess oil.
  •

While the churros are still warm, make a vertical cut on one side to open the churro. Fill each one with 2 to 3 tablespoons of cajeta (Mexican caramel, dulce de leche or caramel sauce). Reseal the churros and sprinkle with the sugar and cinnamon mixture. Serve with a cup of coffee or Mexican hot chocolate. Enjoy!
