If you're looking for tasty Easter recipes, then this dish with carrots, maple syrup, cilantro and cumin might be what you need. It's perfect as a side for any dish. My kids don't really like carrots, but it's an important nutrient, so I'm always looking for ways to make them more appetizing. This recipe has been a great success and they really enjoy the touch of maple and cumin that gives it a delicious taste.

Ingredients

  • 1 1/2 lbs medium carrots, peeled and whole
  • 3 garlic cloves, chopped
  • Salt
  • 6 tablespoons olive oil
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup Progresso™ chicken broth
  • 2 tablespoons maple syrup
  • 1/2 cup chopped cilantro

Directions

    Place the rack in the middle of the oven and preheat to 375°F.

    Place the carrots side by side in a baking dish. Place the garlic in the middle of the carrots.

    Mix the broth, maple, olive oil, cumin, cayenne pepper and salt together in a bowl.

    Sprinkle this mixture over the carrots and cover with aluminum foil.

    Bake for at least 30 minutes or until tender. Remove the aluminum and continue baking until they start to brown, about 15 minutes. Add the cilantro and serve at room temperature.
