Today, I bring you a delicious cauliflower arroz con pollo. I’ve wanted to add cauliflower to my arroz con pollo for a very long time, and I finally did it. I had heard they were a great combination, and I loved it. I love vegetables, and this is a delicious dish for those who want arroz con pollo but with fewer carbs. It tastes great and it is just as good as the traditional arroz con pollo. I hope you try this delicious and simple dish, and that you enjoy it as much as I did.

Ingredients

  • 3 cups raw cauliflower, grated
  • 1/2 cup peas, frozen
  • 1/2 cup carrots, sliced
  • 3-4 garlic cloves, finely cut
  • 1/2 cup onion, finely cut
  • 1/2 tablespoon olive oil
  • 2 eggs, scrambled
  • 3 tablespoons soy sauce
  • 1/2 cup corn
  • 1/2 lb. chicken, cubed

Directions

    In a pan over medium heat, fry the garlic and onion in olive oil until the onion is soft and translucent.

    Add the peas and carrots. Cook until soft.

    Add the scrambled eggs, cauliflower and soy sauce. Stir constantly for 5-7 more minutes.

    Add the chicken and corn. Leave the cauliflower cooking stirring constantly until the chicken is cooked. Serve immediately.
