Cauliflower is a very versatile vegetable and can be cooked in many ways. My all-time favorite is this cauliflower nuggets recipe. They are delicious and they can be served as an appetizer, or if you make them even smaller, they are great as a snack during parties and meetings. The best part is that you can prepare them ahead of time and freeze them. To heat them up, take them out of the fridge, when they reach room temperature, place them in the oven for a few minutes and enjoy!

Ingredients

  • 2 cups cauliflower, cooked
  • 1 egg
  • 1/4 cup parsley leaves
  • 1/4 cup green onions, only the white part
  • Salt and pepper, to taste
  • 1/2 cup parmesan cheese
  • 1 cup breadcrumbs (panko)
  • Oil to fry

Directions

    Put the cauliflower, egg, parsley, green onions, salt, pepper and parmesan in a food processor. Pulse until you get an even mixture.

    Put the mixture in a medium-sized bowl and add the panko; mix till they combine.

    Divide the mixture into 10 equal parts and form balls using your hands. Afterwards, lightly press to obtain disk-formed nuggets.

    Heat enough oil over medium heat until it reaches 350° F. Fry the nuggets until they are golden on both sides, which should take 2-3 minutes. Place on a plate with paper towels.

    Serve with your favorite sauce.

Expert Tips

  • tip 1
    Don’t add a lot of salt, since the parmesan is already quite salty. I only added a pinch.
