The celebration of Independence Day in the United States is near, and there is nothing more patriotic than a dessert with the colors of the flag: red, white, and blue. Ever since I have lived in Florida I celebrate this day in a special way, inviting family and friends to enjoy a parrillada with hamburgers, hot dogs, and potato salad - all with a touch of sabor latino. And knowing how we all love to eat, we can’t miss out on a delicious dessert. That’s why today I’m sharing with you this recipe for Cheesecake with Blueberries, Strawberries and White Chocolate. Ingredients

For the crust:

  • 1 package of ready-made pie crust (you will only need one crust. The package may contain two)

For the whipped cream:

  • 1 1/2 pints of fresh cream to whip
  • 1 1/2 cups of powdered sugar
  • 1 teaspoon of vanilla extract

For the filling:

  • 1 package of cream cheese (approximately 8 ozs)
  • 3 tablespoons of granulated sugar
  • 1 cup of fresh strawberry puree
  • 1/2 teaspoon of vanilla extract
  • 8 ozs of whipped cream (store-bought or homemade)

To decorate:

  • 1/2 cup of shaved white chocolate
  • Fresh strawberries and blueberries
  • 1 cup of whipped cream

Directions

    Take the pie crust dough out of the package, you will only need one crust, and extend it over the pie dish. Make sure to cover the entire inside of the dish and its sides. Bake for 10 minutes at 350 degrees Fahrenheit or until golden in color. When done, remove from the oven and let cool at room temperature.

    To prepare the whipped cream it’s important to previously chill it in the freezer for 15 minutes, along with the mixing bowl and the mixer. When they are well chilled, take them out of the freezer, open the container of cream and add it to the cold mixing bowl. Beat on high speed for a few minutes until the cream doubles in size. Lower the mixer speed and add the sugar little by little, mixing well. Last, add the vanilla and beat for a minute more. Store inside the refrigerator.

    To prepare the filling, use the mixer to first beat the cream cheese. Next add the fresh strawberry puree, vanilla, sugar and mix for three to five minutes until all the ingredients have a smooth and light consistency. Add the eight ounces of whipped cream and fold it in carefully to avoid losing its light texture. When ready, fill the pie crust with the prepared filling. Using a cake decorating tip, decorate the pie with whipped cream flowers and store in the freezer for 10 minutes.

    Remove from the freezer, decorate with fruit and sprinkle with white chocolate to give it that final touch.

    Keep the pie stored in the refrigerator or in the freezer to keep it firm before serving. It’s recommended to use a cake decorating bag for better presentation.
