Ingredients

  • 4-6 chicken medallions
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 cup marinara sauce
  • 1/2 cup mozzarella cheese
  • 1 lb yucca, parboiled and cut into approximately 1-inch chunks
  • Oil for frying

Directions

    Preheat the oven to 425° F.

    Season the chicken medallions with salt, pepper, and garlic powder. Set aside.

    Heat the oil in an oven-safe pan. Cook the medallions for 3-4 minutes on each side, or until cooked and light golden. Add a tablespoon of marinara sauce over each medallion and sprinkle with mozzarella cheese.

    Bake for 5-8 minutes, or until the cheese is melted and lightly browned.

    Fry the yucca in batches in a pan with plenty of oil. Place on an absorbent paper towel to dry up all of the excess grease.

    Serve the chicken medallions with the fried yucca on the side.
