It’s no secret around my family that pork is my favorite of all the meats. In fact, my cousins like to tease me and say, “She can’t go a day without eating her pig!” I don’t care though. I wave my swine flag with a massive amount of pride. The other thing that I can’t go too long without is sweets. Chocolate, to be exact… chocolate cake, chocolate ice cream, chocolate bon-bon’s, chocolate cookies, chocolate shakes and bars… you get the idea. Because of these two facts, I have found a way to combine the pair of food loves in one: Chocolate Covered Bacon. Yup, you heard right. I know that most people might find this combination a bit strange and usually equate bacon with breakfast or a sandwich but let me assure you that this fusion is actually freaking heavenly and you will fall in food-love with it. My fiancé is also a bacon fan (surprise, surprise that I ended up with someone after my own heart!) and with Valentines Day around the corner, I’ve decided to show him my love with a box of chocolate covered bacon. I know he’s going to delight in this unique, salty, yummy gift. Give it a try for your sweetheart…. I’ll bet he’ll be surprised and cherish a cool gift like this.

Ingredients

  • 1 lb of bacon
  • 1 (12 ozs) bag of semisweet chocolate chip cookies
  • 1 tablespoon coconut oil

Directions

    In a large frying pan over a medium flame, fry bacon laying as flat as possible. Turn and fry on both sides until bacon is cooked through. Remove from oil and allow to dry/come to room temperature on a paper towel lined plate.

    Melt the chocolate: In a metal bowl add chocolate chips and coconut oil, then set that metal bowl over a pot with boiling water in it. Stir until the chocolate melts and is smooth.

    Pour chocolate into a cup, then dip each bacon slice into cup.

    Place the dipped pieces of dipped bacon onto a piece of wax paper and allow them to set.

    Use another type of chocolate for variety. White, milk or dark are all crowd pleasers.
