One of the Colombian dishes I love most is red beans with bacon, quite a tradition in my home country. This Colombian style red bean recipe is a flavorful dish, and perfect to pair with other classic dishes like the famous bandeja paisa. I also love enjoying these frijoles with a serving of white rice and plantains. Hopefully you’ll pair your red beans with some of your favorite other sides too.

Ingredients

  • 2 lb dried large red beans
  • 3 chicken bouillon cubes
  • 1 onion, finely chopped
  • 1 lb bacon, cooked and cut into 1-inch pieces
  • Sazón GOYA® con Azafran, if desired
  • 1 carrot, shredded
  • 1 large tomato, diced
  • 2 green plantains, peeled and diced
  • Salt, as desired
  • Fresh cilantro leaves, if desired

    Rinse beans and place in a large bowl. Add enough water to cover beans. Soak beans in water for at least a day to soften. Do not throw away the water; you’ll need it to cook the beans.

    Add the soaked beans and water along with all remaining ingredients except the cilantro to a pressure cooker. Cook for about 1 hour. (If you use a traditional pot, cook for at least 3 hours at low temperature.)

    Remove from the heat, garnish with cilantro leaves and serve.
