Corn cake is one of my grandmother's specialties. Normally, she prepares it for dessert. We always know that after dinner we get to enjoy this delicious treat. The aroma of the corn has fascinated me since I was a little girl and it's one of my favorite grains. I enjoy it with salads, soups, pastries and of course popcorn. Whenever my grandmother made this dessert she had to make sure she makes enough because they always disappear. This recipe is ideal for any season of the year and it goes well with everything. Enjoy a piece of this treat with a cup of coffee, vanilla ice cream or tea. I'm sure you'll like it.

Ingredients

  • 2 cans frozen whole kernel sweet corn
  • 1 large can of condensed milk
  • 1/2 teaspoon of baking powder
  • 4 eggs
  • 3/4 stick of butter at room temperature
  • 1 tablespoon vanilla extract
  • 1/2 cup flour Gold Medal™ all-purpose flour
  • 1/2 cup corn flour / cornstarch
  • Grated white cheese (optional)

Directions

    Preheat the oven to 350°F. Use a mixer to combine the ingredients until there are no longer lumps (it's normal to have pieces of cheese). Pour the mixture into a previously greased cake mold to prevent the cake from sticking when being removed from the mold. Bake for about 40 minutes.

    Remove from the oven and let cool Refrigerate and serve.

    To be sure the cake is ready, poke the middle with a toothpick. If it comes out clean it's ready.
