Cornbread Stuffing with Poblano Pepper Rajas

Aside from the traditional turkey, the Thanksgiving menu also includes typical dishes like stuffing. There are many versions of stuffing made with beef, bread, wild rice with dried fruits, chestnuts and many more. It’s called stuffing because many people like to fill their turkey with these preparations but also serve it as a side on Thanksgiving. I personally like stuffing made with homemade cornbread like the recipe I’m sharing with you today which includes poblano peppers, tender corn and cheese. This combination also goes very well with turkey with pipián sauce or pavochón.

Ingredients

  • 1 full loaf of cornbread or 8 muffins/cupcakes crumbled
  • 1 cup milk
  • 1/2 cup Mexican cream
  • 1/2 cup poblano peppers roasted and diced
  • 1 cup frozen corn cooked tender
  • 1 teaspoon salt
  • 2 cups shredded Cheddar and Monterey Jack cheese
  • 1 cube of butter

Directions

    Place the crumbled cornbread in a large bowl; add the milk, cream, peppers and corn. Combine well with your hands and season with salt.

    Place this preparation in a cast iron skillet or a lightly greased, glass baking dish. Cover with cheese and add the cube of butter to the center.

    Bake at 375°F for 20-30 minutes or until browned and the cheese has melted.

    Serve immediately.

    You can use frozen corn, just be sure to cook it and dry off the excess water.
