Creamy Pumpkin Soup

As we enter fall, we’ll begin to see all the different types of pumpkins arrive to the supermarkets. Many of them are used only as decoration, but I like using them to prepare my own seasonal dishes. The pumpkin is a very versatile fruit, used in preparing both sweet and salty recipes. Most commonly it’s made into pies or soups. Besides possessing numerous health properties, it acts as an excelente antioxidant as well. One of the recipes I enjoy preparing most is this cream of pumpkin soup, for its bright color and delicioso flavor. This soup makes an ideal accompaniment or main dish, and can be combined with potatoes or carrots.

Ingredients

  • 1 small pumpkin
  • 1 diced onion
  • Salt, pepper and curry, to taste
  • Plenty of water
  • Olive oil
  • 3/4 cup whole cream (optional)

Directions

    Start by cutting open the pumpkin and peeling each half. Next, remove the fiber and seeds from the pumpkin sides with a spoon. When clean, cut the sections into cubes.

    Separately, add some olive oil to a skillet and sauté the onion for a few minutes. Then incorporate the chopped pumpkin with a bit of salt, pepper and curry. Last, pour in the cream and stir well.

    Afterward, cover the contents of the skillet with water and place a lid on top. Let simmer over medium heat for around 30 minutes, or until the vegetables are tender.

    When ready, mash the mixture and serve immediately. Garnish with a few sprigs of parsley, dill and or a dash of cream.

    You can also try adding grated carrots, cubed potatoes or even leeks before mixing.
