Creole Style Rice and Beans

Rice and beans are very popular in Mexico and in some parts of the country, this dish is known as Moros con Cristianos, a very easy dish to prepare. To make a delicious variation of it, we’re preparing creole style rice and beans. Creole food is traditional in the state of Louisiana, and it usually includes celery, onion and bell pepper. The spices used include thyme, chili, oregano and different types of pepper, among others.

Ingredients

  • 4 oz longaniza sausage
  • 1/2 bell pepper, chopped
  • 1 celery stalk, chopped
  • 1/4 cup white onion, chopped
  • 2 cups beans, cooked without salt
  • 1 teaspoon Creole-style spices
  • 2 cups white rice, cooked

Directions

    Peel and slice the sausage, celery, onion and bell pepper.
  • 2
    In a deep pot stir together the sausage, bell pepper, celery, onion, beans and spices. Cover and cook over medium-high heat until it boils.

    Uncover and cook for 20 minutes more.

    When serving, put half a cup white rice on a dish and cover with a generous portion of beans.

Expert Tips

  • tip 1
    Save some time by using canned beans. I only suggest that you drain them and add fresh water.
  • tip 2
    If you can’t find creole spices, you can prepare them yourself by combining garlic powder, onion powder, oregano, thyme, black pepper, white pepper, paprika, salt, and Cayenne chili.
