Ingredients

  • 1/2 cup flour
  • Cooking spray
  • 3 eggs, lightly beaten
  • 1/2 cup milk
  • 2 tablespoons mustard
  • 3 cups Progresso™ plain bread crumbs
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 cup shredded coconut
  • Lime zest from 1 lime
  • 6 (4-6 oz) mojarras

Directions

    Pre-heat oven to 425°F. Line a baking sheet with flour and generously coat with cooking spray.

    Place flour in a shallow baking dish.

    In another shallow baking dish, whisk together eggs, milk, and mustard.

    Combine breadcrumbs, pepper, salt, coconut, and lime zest in another shallow baking dish.

    Dredge mojarra pieces in flour. Tap to remove excess flour, dip in egg for a few minutes and coat in coconut breadcrumb mixture.

    Place on baking sheet. Bake for 12-15 minutes or until fish flakes easily with a fork.
