Crispy Goat Cheese and Artichoke Pizza

Naan bread or artisanal bread makes the best thin crust for a pizza. The wonderful thing about this ready-made bread is that it comes seasoned with herbs and spices already. From whole wheat to garlic and rosemary seasoning, this fluffy bread crisps nicely in the oven. It’s a handy shortcut when dinner needs to be ready quickly. I love cooking with artichokes, but can be cumbersome when it comes to cooking them. Canned artichoke hearts are great as a topping for this type of pizza because you can easily use leftovers in salads and dips. To keep this recipe low in fat, I used tangy goat cheese. It’s easy to spread and compliments the sweetness of the roasted tomatoes, nuttiness of the pine nuts and the spicy kick from the jalapeño. Serve this tasty pizza as an appetizer or as a healthy lunch. You’ll never see flat bread the same way again when you start using it as crispy pizza crust.

Ingredients

  • 1 (10 oz.) naan bread or artisanal flat bread
  • 1 teaspoon olive oil
  • 3 tablespoons goat cheese
  • 4 artichoke hearts from can
  • 5 grape tomatoes, halved
  • 1 small jalapeño, sliced in thin rounds
  • 2 tablespoons toasted pine nuts
  • 1/2 tablespoon cilantro, chopped
  • fresh cracked pepper

Directions

    Preheat oven to 350°F.

    Place prepared artisanal pizza flat bread or naan bread on a baking sheet and brush with olive oil. Bake for 10 minutes.

    Remove flat bread from oven and top with goat cheese, artichoke hearts, grape tomatoes, jalapeño slices, pine nuts and cilantro.

    Place pizza back in the oven for 10 more minutes.

    Remove from oven and top with cracked pepper.

    Cut in slices and serve warm.
