Cucumber and Bean Salad Tostadas

Summer brings with it an abundance of cucumbers and being that it’s such a fresh vegetable, it should be a star player in your seasonal recipes. This salad can be prepared very quickly and served with tostadas, it’s a light meal. Try it out because I’m sure you’ll love it.

Ingredients

  • 1 can (15 oz.) Progresso™ cannellini beans
  • 1 large cucumber or 2 medium
  • 2 large avocados
  • 1 box of cherry tomatoes
  • Lemon, salt and oil
  • 4 tostadas
  • Hot sauce, to taste

Directions

    Open the can of beans and strain. Wash the beans with tap water and rinse.

    Cut the ends off of the cucumber and then cut lengthwise. If there are lots of seeds, remove with a spoon. Dice the cucumber into small pieces and place in the bowl with the washed beans.

    Cut the tomatoes in half and add to the salad.
  • 4
    Season with salt, lemon and oil.
  • 5
    Open the avocado and place the edible part on a dish. Use a fork to mash quickly.

    Place a layer of avocado on the toast, then 3 tablespoons of salad and finish with your favorite hot sauce.

    Serve immediately.
