Dulce de Leche Cheesecake

This cheesecake with dulce de leche is absolutely irresistible! It's sweet, creamy and super delicioso. Just as it is, a cheesecake is naturally rico, but with add dulce de leche and few will be able to resist this tempting dessert with a Latino twist.

Ingredients

  • 1 package tea biscuit cookies (Maria), crushed into crumbs
  • 1/3 cup melted butter
  • 1 package (8 ozs) cream cheese
  • 1 can (12 ozs) evaporated milk
  • 1 1/3 cups dulce de leche
  • 3 eggs

    In a bowl, combine the crumbled cookies with the melted butter. Then using the crumb mixture, cover the bottom of a glass (or aluminum) pie dish. Lightly press down on the crumbs to form the cheesecake crust. Leave the finished pie dish in the refrigerator while preparing the cheesecake filling.

    Next, heat the oven to 350°F. In a blender or food processor, mix the cream cheese with the evaporated milk, one cup dulce de leche and three eggs. Then pour the mixture into the pie dish over the chilled crust. Before placing in the oven, set the pie dish over a baking tray to catch any filling that rises over the edge of the dish while baking.

    Bake for 30 to 35 minutes or until the center of the cheesecake has set. Remove from the oven and let cool at room temperature. When cool, refrigerate for three hours. Before serving, pour the remaining dulce de leche over the top of the cheesecake. Disfruta!
