Spring brings with it a number of fun outdoor activities, long days, colorful landscapes and the anticipation of a visit from the Easter bunny. One delicious way of celebrating this moment is by preparing simple ice cream cookies. Kids can help decorating them with pastel colored balls of ice cream and pieces of candy. In this recipe, we will create a birthday cake flavored ice cream that is delicious in taste and very colorful. I'm sure your loved ones will want to repeat this recipe next year.

Ingredients

  • 1 package (9.1 oz) refrigerated Pillsbury™ Shape™ Bunny Sugar Cookie Dough (20 Count)
  • 1/2 liter of ice cream (strawberry, pistachio, mint or ice cream cake)

Directions

    Set the oven to 350°F.
  • 2
    Arrange the cookies with bunny pattern on an ungreased baking sheet, leaving spaces of about 1 inch between them.

    Bake cookies 8 to 10 minutes.

    Remove from the oven and let cool.

    Once cold, take one of the cookies and place a large scoop of ice cream on it.

    Take another cookie and apply pressure on the ice cream with it, forming a sandwich.

    You can eat them immediately or leave them in the freezer for a few minutes, to achieve a firm consistency.

    If you want to give it a fun and colorful touch, just add sprinkles to the ice cream of each sandwich.
