Ingredients

  • 1 14.5-oz can Muir Glen™ organic fire roasted diced tomatoes drained (reserve the juice)
  • 1/2 cup red onion, finely diced
  • 1/2 cup cilantro, washed
  • 1 teaspoon Mexican oregano
  • 2 tablespoons fresh lemon juice
  • Salt and pepper, to taste
  • Bread of choice, sliced and toasted

Directions

    In a bowl, combine tomatoes, red onion, cilantro, oregano, and lemon juice.

    Season with salt and pepper; add juice if needed and spoon on toasted bread. Serve and enjoy.
