Fennel Coleslaw

One of the natural condiments I don't use very often is fennel. My grandmother, however, did use it quite often because of its fresh anise taste, one of her favorites. In honor of my grandmother, I decided to prepare a dish with this condiment. You can find fennel in the produce section of your supermarket. The bulb is white and fat and has long green stems with many branches. If you don't find them right away just ask the department manager and ask him for it. The salad I'm showing you today can be ready in just 15 minutes. It's fresh and crunchy and goes very well with burgers, sandwiches and even quesadillas.

Ingredients

  • 1/4 white cabbage washed and sliced very thinly
  • 1/2 teaspoon of lemon zest
  • 2 tablespoon of rice vinegar
  • 1 fennel bulb
  • 1/4 cup of mayonnaise
  • 1/8 teaspoon of salt
  • Ground pepper, to taste

Directions

    Place the cabbage in a deep container, to then add the lemon zest and vinegar. Stir and let sit.

    Cut off the stems and the bottom of the fennel. Cut the bulb in half and carefully cut out the heart and throw it out. Cut the fennel into very thin slices and add to the cabbage with the vinegar.

    Add the mayo, salt and pepper. Serve immediately.

Expert Tips

    Purchase the cabbage and fennel at least one day in advance and keep them refrigerated, this way the salad will be fresh when you serve it.

    You can use red cabbage if you want your salad to be colorful.
