Fruit and Kale Smoothie

I’ve always loved smoothies. As a little girl, I used to love my mom’s quick breakfast because it included a banana smoothie and a cheese sandwich. As I grew older, I’ve been adding to her classic by including other fruits, yogurt, chia seeds, or peanut or almond butter to the smoothie. What I loved the most is that you get the pulp of the fruit all to yourself! For the past years, I’ve noticed different green smoothie recipes all over the internet, but never dared to prepare them because I wasn’t sure if my kids would like them. One day, I decided to prepare a sweet version without adding sugar; that is, only using the natural sweetness of fruits and some vegetables. After a few trial-and-error recipes, I came up with the perfect one. The best part? You can add anything you want or replace ingredients according to what you have available in your kitchen. Juices and smoothies are an effective way to include more fruits and veggies in our diet. My kids love the combination of blueberries, banana, kale and orange; I love it because they get nutrients in a refreshing, delicious way!

Ingredients

  • 1 1/2 cups orange juice
  • 1 cup water
  • 1 cup blueberries (preferrably frozen)
  • 1 banana
  • 1 cup kale leaves

Directions

    Mix all the ingredients in a blender, until smooth.
  • 2
    If still not smooth, turn blender off for a few seconds and turn the ice breaker button on again for a few times, until smooth.

    You can replace blueberries with frozen strawberries or any other frozen fruit.

    If you will use fresh instead of frozen fruits, then use ice instead of water.

    Kale can be replaced by fresh or frozen spinach.
