Goat Cheese and Guacamole Crostini

Some of my favorite recipes are for meals that are easy to put together, since I know they won't take all day to prepare and I can enjoy my time doing other things. Besides, sometimes you just want to taste something delicioso without the hassle of complicated preparation. One easy recipe that I make often – specially for eating while watching my favorite television shows – are these tasty crostini with goat cheese-guacamole; a perfect pasabocas (hors d'oeuvre) to share with friends and family. In this recipe I use ingredients that make prep, from start to finish, even faster and more deliciosa for a dish that is ready in 30 minutes or less!

Ingredients

  • 1 avocado
  • 5 oz goat cheese, at room temperature
  • 1 spoonful Muir Glen™ fire roasted tomato pasta sauce
  • Salt and pepper, to taste
  • 1 loaf French bread, thinly sliced
  • 1 tablespoon extra virgin olive oil

Directions

  • 1
    Preheat the oven to 350°F.
  • 2
    Cut and peel the avocado. Place in a bowl together with the goat cheese and Muir Glen™ sauce. Salt and pepper, to taste.

    Using a fork, mix the ingredients until completely incorporated. Taste, and add more salt and pepper if necessary.

    Brush the slices of bread with oil and arrange on a baking sheet. Bake for about 10 minutes, or until crispy.

    Remove from the oven and spread each slice with the cheese-guacamole mix.
