Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup finely chopped onion
  • 2 tablespoons finely chopped shallots
  • 1 cup uncooked Arborio rice or regular short-grain rice
  • 1 clove garlic, finely chopped
  • 3 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1/8 teaspoon crushed saffron threads or ground turmeric
  • 1 box (9 oz) frozen baby lima beans, thawed, drained
  • 1/4 cup dry white wine, nonalcoholic white wine or chicken broth
  • 1/2 teaspoon chicken boullion granules
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons finely chopped fresh parsley
  • 1/4 teaspoon freshly ground pepper

Directions

    In 3-qt saucepan, heat oil over medium heat. Cook onion and shallots in oil about 5 minutes, stirring frequently, until onion is tender.

    Stir in rice and garlic. Cook 2 to 3 minutes, stirring occasionally, until edges of rice kernels are translucent. Stir in 1 1/2 cups of the broth and the saffron. Heat to boiling; reduce heat. Simmer uncovered 6 to 8 minutes, stirring occasionally, until most of liquid is absorbed.

    Stir in remaining broth, the lima beans, wine and bouillon. Simmer uncovered 15 to 20 minutes, stirring occasionally, until rice and lima beans are just tender and mixture is creamy. Stir in cheese; sprinkle with parsley and pepper.
