Green Onion and Yogurt Guacamole

When I was a little girl, my auntie Minnie used to make creamy guacamole. She would veer away from the traditional guacamole and head toward a fluffy guacamole that seemed so light it could float away. I use to dip my taquitos into her guacamole and think it was the best thing that ever passed my lips. It made me feel like I was floating on a cloud or like a little fairy that could whisper to the avocado trees and they would produce the creamiest avocado ever. Yes, her guacamole was pure magic! As I got older, I have always held a special place in my heart for my auntie Minnie’s creamy guacamole. Once I hit the age of cooking and making my own food, I asked her what the secret was to the fluffy guacamole that I could never recreate. She looked at me as if everybody in the whole world was in on the secret and said: “yogurt.” Yogurt? Who would have thought? I certainly wouldn’t have. Then she told me to add plenty of green onions and a splash of lime to brighten the taste. I took her words and have lived by them every time I want a creamy guacamole. Enjoy!

Ingredients

  • 3 ripe avocados
  • 2 tablespoons Greek yogurt
  • 1 cup finely chopped green onion
  • 1/2 teaspoon garlic powder
  • 1/2 tablespoon salt
  • 1 lime (juiced)

Directions

    In a large bowl add avocados, and smash with a potato masher.

    Add in chopped green onion and Greek yogurt. Mix well to combine.

    Add in garlic powder and salt. Mix the avocado mixture again to combine.

    Pour in the lime juice and mix well.
  • 5
    Serve with cucumber or chips, or anything your heart desires. Enjoy!
