One of my favorite meals to make is a grilled cheese sandwich. It's easy, delicious, and quick. You can never go wrong with bread and cheese! I love to spruce it up a little and throw in some sweet flavors into the mix. Figs pair perfectly with cheese, making it my dried fruit of choice. Try this sweet and savory combination next time you're in the mood for this comfort food classic with an added sweet twist.

Ingredients

  • 2 tablespoons butter, divided
  • 1/2 small onion, sliced
  • 1/4 cup white wine vinegar
  • 4 figs, halved
  • 4 slices sandwich bread
  • 1/2 cup Manchego cheese (Mexican variety), shredded
  • 1/2 tablespoon red pepper flakes (optional)

Directions

    Place 1 tablespoon butter in large skillet on medium heat. Cook onion for 2 minutes, add white wine vinegar and continue cooking until caramelized and dark brown. Add figs and cook for 5 more minutes.

    Spread remaining butter on one side of each bread slice.

    On a separate skillet, place bread butter side down and 2 tablespoons of cheese on top of two slices. Cook until cheese begins to melt. Top cheese with 4 fig halves and onion mixture. Top with 2 tablespoons of shredded cheese and bread slice, butter side up. Flip sandwich and cook until top layer of cheese begins to melt.

    You can use dried figs when fresh ones are not available.

    For a little spice, add 1/2 tablespoon dried red pepper flakes to onions and figs.
