Halloween is around the corner and it's always a great celebration for us. My kids anxiously wait for this holiday all year long. We've already begun planning our costumes. We're also planning what to eat and as you already know, this time of year brings with it lots of candy, so it's always a good idea to prepare some salty foods. Don't limit your creativity; there are plenty of festive things we can create. Today I present you with a super simple Halloween recipe made with pumpkin. These pumpkin quesadillas are an excellent lunch for the little ones. You can buy the tortillas already made or make them at home. I hope you enjoy it!

Ingredients

  • 1 cup flour tortillas
  • 1/2 cup plus three tablespoons of cold water
  • 1/4 teaspoon salt
  • 1 package (7 oz) grated quesadilla cheese
  • You will also need a pumpkin shaped cookie cutters, a bowl, a plate to make tortillas, a clean plastic bag and a frying pan or griddle

    Mix the tortilla flour with water and salt until the dough is soft and even. Divide the dough in half, divide the halves in two and continue the process until you've got 8 balls.

    Cut the edges off of a plastic bag so that it's big enough to cover the inside of a tortilla maker completely. Take one of the balls of dough and place it in the center of the tortilla maker, be sure it stays inside of the plastic area, and close the tortilla maker to form the tortilla. Use a pumpkin-shaped cookie cutter to make pumpkin shapes. Save the extra dough.

    Set a pan on the stove over high heat, once it's hot reduce the temperature a little and place the pumpkin shaped tortilla on it. Flip the tortillas when they're cooked (you’'ll know when it begins to brown a little). Move to a dish once cooked. Repeat until you've got 6 tortillas.

    Take another ball and cut out a pumpkin. Use a knife to cut out the eyes, nose and mouth. Cook like the rest. Take the extra dough and make 6 faces.

    Sprinkle the quesadilla cheese on one of the pumpkins, cover with the face and repeat until you're done with all of the tortillas.

    Lower the temperature for the pan and place the quesadillas in it until the cheese has melted. You could also use the microwave.

    Serve with your favorite sauce.

    Add finely chopped peppers to the cheese to make it a little spicy.
