Ham and Cheese Stuffed Arepas

I confess I’m slightly obsessed with arepas. For me they’re one of the most delicious, versatile and easy-to-prepare foods. It’s as easy as mixing corn flour with water and salt to make the dough before giving it its traditional round form. Arepas are popular in Colombia and Venezuela and can be served alongside main dishes stuffed, or topped with different ingredients. In Colombia arepas grace the breakfast menu, enjoyed with butter and cheese, but this is slowly changing and now we serve them with any or all meals. Today I want to share a stuffed ham & cheese arepa recipe that I just love. Enjoy!

Ingredients

  • 1 cup hot water
  • 1 pinch salt
  • 1 cup corn flour for arepas
  • 4 slices mozzarella cheese
  • 4 slices ham
  • Oil cooking spray or butter, to taste (for cooking)

Directions

    Mix the water, salt and flour in a container large enough to knead the dough.

    Knead together all ingredients until thoroughly combined and the dough soft. If the dough is too dry, add additional water. If it’s too sticky, add additional four.

    Portion out the dough into 8 balls and arrange the balls between 2 sheets of plastic wrap. Use a rolling pin to roll out the dough into arepas of desired thickness.

    Use a large cup or cookie cutters to give the arepas their round form, pressing down over the plastic wrap.

    Remove the plastic wrap and any excess dough. Set a slice of cheese and ham over 4 of the arepas and cover each one with another arepa, sealing the edges closed with your hands.

    Grease a griddle or frying pan with oil cooking spray or butter. Heat over medium-high heat and once the griddle is hot, add the arepas.

    Grill or toast the stuffed arepas for 4 minutes per side or until golden brown.

    Serve immediately.
