Ham, Cheese and Bean Sincronizadas

Sincronizadas are a modern treat of Mexican cuisine consisting of a couple of flour or corn tortillas (depending on your preference) stuffed with ham and cheese. They’re similar to quesadillas, but the difference is that sincronizadas are made with two tortillas and quesadillas are made with only one folded flour tortilla. Another difference is that quesadillas may be stuffed with many ingredients, while sincronizadas are only stuffed with ham and cheese. My version of sincronizada is very similar to the quesadilla because I do like to stuff it with more than just ham and cheese. I think it’s a great way to make our children eat more vegetables, because you can add tomato, mushrooms, onions, asparagus and every vegetable you wish. You can also use different types of tortillas. For example, you can use whole wheat, blue corn, flax or vegetable, red or green tortillas. We eat a lot of black beans at home, whether they’re fresh or in their ground form, and that’s another ingredient that I like to add to my sincronizadas. They give them a great taste, help all the ingredients blend well, and I’m able to use the beans in another way, so they won’t get tired. I hope you like my sincronizadas; they’re very easy to make.

Ingredients

  • 8 tortillas (use a favorite: flour, whole wheat, corn, flax, vegetable, etc.)
  • 1 cup of ground or refried beans
  • 2 cups ham, cut in cubes or strips
  • 2 cups Manchego or Monterey Jack cheese
  • 1 large tomato, cut in cubes
  • Cooking spray

Directions

    Spray skillet with cooking spray and heat over low heat to avoid tortilla to stick.

    Spread on tortillas ground or refried beans, place two at a time in skillet. Add ham, cheese and chopped tomatoes over one tortilla. Let it heat for about two to three minutes; covering with a second tortilla. Press down with spatula so tortillas stick and ingredient flavors blend.

    Remove from skillet and place on serving plate. Decorate with a teaspoon of cream, ground beans or simply green cilantro or parsley leaves.

    Go through same process with remaining ingredients.

    If you stuff the sincronizada with cheese, ham and chunks of pineapple, you’ll have a Hawaiian version.
