Hibiscus Quesadillas

Did you know that you can use hibiscus flowers for more than agua fresca or tea? The re-hydrated hibiscus flower is completely edible. It can be used for salads and stews, but my favorite way to enjoy hibiscus flower is in quesadillas. The flower is a little bitter, so I like to combine it with the natural sweetness of caramelized onions. To enhance the flavor even more, I add chipotle pepper in adobo sauce to give a light touch of spice and smoke to the recipe. If you have never tried hibiscus flower, this is the ideal recipe for enjoying its delicious flavor.

Ingredients

  • 1 cup hibiscus flowers
  • 4 cups water
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 1 chipotle pepper in adobo sauce, finely chopped (optional)
  • 8 oz. Manchego or cheddar cheese, grated
  • 6-8 flour tortillas

    Boil the hibiscus flower in four cups of water to re-hydrate the flowers. When the water begins to boil, remove from heat. Using a fine strainer, separate the water into a pitcher. You can use this concentrate to make agua fresca de Jamaica.

    In a medium size saucepan, heat the vegetable oil at medium heat. Add the slices of onion and cook them until they begin to caramelize, stirring occasionally. Add the hibiscus flower and the chipotle pepper; season with a pinch of salt. Let it cook for five more minutes.

    To make the quesadillas, heat the tortillas on a griddle over low heat, just until the tortillas are soft. Put two or three spoonfuls of grated cheese in each tortilla with two or three spoons of the sautéed Hibiscus flowers. Fold the tortillas in half. Heat the quesadillas over the griddle, turning over occasionally, until the cheese is melted.
