Horchata and Fruit Popsicles

The first time I made these popsicles, it was only because I had some leftover horchata fruit punch agua fresca, so I decided to do something creative with it. My kids and husband loved them! Since then, I always prepare an extra pitcher just to make these paletas! I love to make them with fresh seasonal fruits, but you can also use frozen, dried or canned fruits.

Ingredients

  • 1 cup rice, dry
  • 1 cinnamon stick
  • 2 cups water
  • 1 14 oz can sweetened condensed milk
  • 1 12 oz can evaporated milk
  • 2 cups fresh fruits, chopped (strawberry, mango, peach, kiwi, pear, grape, etc.)

Directions

    In a blender, mix the rice and cinnamon stick with two cups of water for 2 minutes. Pour into a pitcher, using a colander to strain.

    Add the condensed and evaporated milk. Mix well.

    Pour the mix in the popsicle molds until just over half is filled. Add the chopped fruits and fill with more mix, if necessary. Cover and insert the sticks. Freeze for at least 4 hours or overnight. Enjoy!
