Ingredients

  • 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Original Biscuits (8 Count)
  • 3 tablespoons vegetable oil
  • 2 cups pico de gallo salsa
  • 8 pasteurized eggs*

Directions

    Heat oven to 375°F. In tortilla press, between 2 pieces of plastic (cut from food-storage bag, if desired) press each biscuit to 6 inches in diameter. Place biscuits on ungreased cookie sheet, 4 at a time. Bake about 10 minutes or until light brown on top. Cool 2 minutes on cookie sheet before removing to cooling rack.

    Meanwhile, to make salsa, in 10-inch nonstick skillet, heat 2 teaspoons of the oil over medium-high heat. Stir in pico de gallo. Cook about 5 minutes or until onions and tomatoes are tender. In blender, blend salsa mixture. Pour back into skillet to rewarm.

    In 10-inch nonstick skillet, heat remaining oil. Cook eggs sunny side up in oil; 2 at a time, separated (or use spatula to separate) and tilting pan slightly to spoon oil over egg whites only. If oil begins to spatter turn heat down slightly. To serve, place 1 egg and about 2 tablespoons salsa on each biscuit.
