Ingredients

  • 4 cups chopped kale
  • 4 sweet potatoes, peeled and cut into thick slices
  • 1/2 cup white onion, chopped
  • 1 teaspoon of safflower oil
  • 6 cup of vegetable broth (natural or canned)
  • Salt and pepper to taste

Directions

    Place your pot on the stove, add the safflower oil and onions.

    Then add the slices of sweet potato and kale. Season with salt and pepper, then the vegetable broth. Cover and cook the soup for 15-20 minutes or until the sweet potato softens.

    Serve in bowls. You can add a side of rice or avocado cubes. This soup is nutritious and low in calories.
