Today I bring you a lamb meatball and rice soup, perfect for the whole family, because who doesn’t like meatballs? Whether beef, chicken, turkey, or lamb (like the ones we’ll make today), there’s something about those little balls of ground meat that makes them irresistible! Meatballs are an excellent way for children to eat meat. The combination of lamb meatballs, vegetables, and rice makes this soup both whole-some and delicious.

Ingredients

For the meatballs

  • 1 pound ground lamb meat
  • 1 teaspoon ground cumin
  • 1 1/4 cups bread crumbs
  • 4 tablespoons green onion, finely chopped
  • Salt and pepper to taste
  • 1 egg

For the soup

  • 5 cups vegetable or beef broth
  • 1/2 cup peas
  • 1/2 cup green beans
  • 1/2 cup carrots, peeled and cubed
  • 1/2 cup rinsed rice
  • Chopped cilantro

Directions

    Mix all of the meatball ingredients in a bowl. Make medium-sized meatballs. In a pot, heat up the broth over medium heat. Add the vegetables and meatballs, cook for 20 minutes.

    Add the rice and cook for another 15 minutes. Add chopped cilantro and serve.
