Lemon Lime Chicken Tacos

My grandpa is a funny fellow for a lot of reasons. For example, he likes to eat meat everyday of his life: beef and pork cuts of all kinds. The funny part is that he will not eat chicken. I try to make him different chicken dishes; some more subtle than others. But he never wants to get near them! I push it on him because chicken is a wholesome alternative to some of the stuff he likes to eat. However, my grandpa always pulls the "I'm 90" card on me when I try to sell him on chicken as a leaner dinner option. I guess there is no way to change his mind at this point in his life. For me though, chicken is a regular part of our family's diet. I especially look forward to taco night and love to prepare chicken tacos. The favorite variety around my house is the lemon-lime chicken tacos I've been making since I could remember. They taste amazing; they're lean and (like I tell my grandpa) are a healthy substitute to other types of meat. Give them a try and delight your family with a tasty lemon lime chicken taco night!

Ingredients

  • 2 chicken breasts
  • 1 lemon
  • 1 lime
  • 2 tablespoon olive oil
  • 1 tablespoon minced garlic
  • Salt and pepper, to taste
  • 8 corn tortillas

Garnishes, to taste:

  • Salsa
  • Onion, diced
  • Cilantro
  • Lemon and lime wedges

Directions

    Add chicken to a large airtight bag and add in lemon and lime juice, olive oil, minced garlic, salt, and pepper. Place in the fridge for a minimum of one hour to marinade.

    On a hot grill, cook chicken until cooked all the way through, for about 10 minutes on each side.

    Remove chicken from grill and, using a big knife, chop into cubes.

    Heat tortillas over an open flame until warmed and slightly charred.

    Fill the center with chicken cubes.

    Garnish with salsa, diced onion, cilantro, and lemon and lime wedges. Serve and enjoy!
