Mango, Black Bean and Quinoa Salad

If you haven't tried quinoa, I recommend you do because it is an excellent source of nutrients and it's gluten free. This delicious mango, black bean and quinoa salad is super nutritious. A vegetarian meal that will surely satisfy!

Ingredients

  • 1/2 cup quinoa, uncooked
  • Salt to taste
  • 1 ripe mango, peeled and cut into squares
  • 1 cup black beans, canned
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • Juice of 1/2 a lemon
  • Pepper to taste

Directions

    Rinse quinoa under water for 2-3 minutes or until the water looks clean. Place quinoa in medium size pot with 3/4 cups of salted water. Let boil, cover and reduce heat.

    Cook for 15-20 minutes or until water has been absorbed and quinoa is tender.

    Leave covered for 5 minutes and mix with a fork as you would do with rice.

    In a salad bowl, mix quinoa with mango, black beans, cilantro, olive oil and lemon. Season with salt and pepper. Serve.

    If you'd like to add a spicy kick, you can add a touch of jalapeño or serrano.
