Meatloaf has always been a favorite recipe at home, one that brings me many childhood memories. My mom used to make it often in many different ways, and this recipe is the one my father loved most. Making meatloaf is not only very simple, it is also very versatile, and allows for a wide range of flavors, which you can eat hot or cold, and accompany with a salad to make a complete meal.

Ingredients

  • 3 lbs ground pork loin
  • 1 lb potato, cooked and mashed
  • 1 medium can (6.5 oz) bell peppers, cut in thin stripes
  • 1 small jar (6 oz) seedless olives
  • 1 small can (5.6 oz) deviled ham
  • 6 large eggs
  • 5 tablespoons parsley, finely chopped
  • Salt to taste
  • 1/3 cup safflower or olive oil
  • 1/2 lb bacon, in thin strips

Directions

    Preheat oven at 350°F.

    In a large bowl, combine the meat and potatoes. Add the peppers, olives and the deviled ham. Mix well. Finally add the eggs, parsley and salt. Using your hands, combine all of the ingredients until all of the mix is uniform.

    Grease a round baking pan. If you don't have one, you can use any baking pan you have. Place the bacon strips at the bottom of the pan. Empty the mix of meat on top of the bacon and then on top of the meat mix, place the remainder of the bacon.

    Bake for approximately 1 hour, until the meat is cooked (if you use an internal thermometer, at approximately 160°F).

    Let set for 10 minutes, remove from the pan carefully and serve hot.
