I have a special place in my heart for apple pie. Not the traditional American-style pie, but my mom’s version of this classic. She would often dress up her pies with meringue, so I grew up knowing how to make meringue in all its forms and how to use it to make pies, cookies and cakes. This pie can start a tradition at your home; it’s a great summer pie that your whole family and friends will enjoy.

Ingredients

For the filling:

  • 7 cups thinly sliced tart (green) apples (about 5 medium-sized apples)
  • 2 tablespoons lemon juice
  • 1/3 cup whole milk or half and half
  • 2 egg yolks
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 teaspoons all purpose-flour
  • 1 pastry crust (9 inches)
  • 1 tablespoon butter

For the meringue:

  • 3 egg whites
  • 6 tablespoons sugar
  • 1/4 teaspoon cream of tartar (optional)

Directions

    In a large bowl, toss the finely sliced apples with the lemon juice. Let it rest while you prepare the rest of the filling.

    In a smaller bowl, whisk in the egg yolks, sugar, milk, vanilla extract, cinnamon, flour and lemon zest until it forms a nice and smooth batter. Pour over the sliced apples until well covered. Set aside.

    Line a 9-inch plate with pastry in a glass pie dish, pour the filling in, distribute evenly and add a few dots of butter on top.

    Bake at 400°F for 20 minutes covered with a foil. Remove the foil and bring the oven down to 350°F, bake for another 25 minutes. Remove and let cool off a bit.

    Meanwhile, beat the egg whites and the cream of tartar in medium speed until foamy. Add the sugar, one tablespoon at a time, beating now at a higher speed. Beat the meringue until peaks form and it holds.

    Distribute meringue on top of the pie and bake again at 350°F for 15 minutes or until the meringue is golden brown.

    Let it cool and store in the fridge.

Expert Tips

  • tip 1
    Meringue can be made without cream of tartar; the egg whites and sugar alone can also make delicious meringue. But the cream of tartar makes meringue look shinier, so it’s up to you if you wish to add this ingredient or not.
