Mini Guava Crostatas

Guava has always been one of my favorite fruits, whether it's fresh, in drinks or juices, in sorbets or jellies, and especially in tarts, cakes or sweet empanadas. All it takes is the aroma of the ripe fruit to take me back to the tropics, where I grew up. I remember coming home one day after culinary school and deciding to prepare a crostata using a different combination of ingredients: the base was pie dough, the filling guava paste cut into strips, and the topping a delicious streusel of butter, cream cheese, cinnamon and sugar. The result was delicious, and since then it has become a favorite in my home. This is another version of the original, in mini form with Fiber One™ Protein as the topping, an ingredient that works wonderfully with this kind of recipe. As you will see, the recipe only requires three ingredients: refrigerated pie dough, guava paste and the cereal. That's all you need to create a delicious pastry in just a few minutes. Enjoy!

Ingredients

  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)
  • Guava paste
  • 1 cup Fiber One™ Protein cereal

Directions

    Preheat the oven to 375°F. Have 12 molds ready for the tartlets.

    Stretch the dough out and cut out circles that are slightly larger than the tartlet molds.

    Place one circle of dough in each mold and press down on the bottom and along the sides of the mold. Cut out the dough sticking out from the mold and pierce the bottom of the mold with a fork.

    When you have all the molds ready place them on a tray.

    Cut small circles out of the guava paste and place one in each of the molds. Bake for 13 minutes.

    Combine the Fiber One™ Protein cereal with the remaining guava paste in a large bowl.

    Remove the molds from the oven and place one teaspoon (or a little more) of the cereal mix on top. Bake for 3 more minutes.

    Cool on a rack and serve immediately.

Expert Tips

    Use quince paste or any jelly you like instead of guava.

    Add a teaspoon of cinnamon powder to the cereal mixture.
